Rice Type: Yamadanishiki
The Dassai company was established in 1948 and became largely famous as a premium junmai daiginjo brand for its exponential growth in recognition around the world. The Dassai 23 is known to be one of the most polished sakes in Japan. This sake has been milled to 23% and it is in a class by itself. With a nose of grapes, flowers, strawberries, and mineral water, the flavor is as luscious as the aroma. Dassai 23 is a clean and plump Daiginjo with chapters of flavors wrapped in a deep and layered structure. Look for hints of brown sugar, fleshy plums, and minerals.

Rice Type: Yamadanishiki rice 35%
A more recent product and made in the U.S.-using the Hudson Valley water and Arkansas rice. Tasting notes of white peaches and ripe papayas with a soft, sweet fragrance. The taste is characterized by a subtle sweetness and refreshing acidity.

Rice Type: Yamadanishiki rice 45%
The Dassai company was established in 1948 and became largely famous as a premium junmai daiginjo brand for its exponential growth in recognition around the world. Using Yamada-Nishiki rice polished down to 45%, the sake delivers fruity aromatics and delicate sweetness. Dassai 45 has a full-figured flavor that rushes with chewy fruit tones to all corners of your mouth. It is wide and heavy, with lots of expansive elements that talk to those who like a mouthful.

Rice Type: Yamadanishiki rice + Gohyakumangoku 73%
Taru, meaning cedar-barrel aged, may be a great sake for whiskey lovers. The flavor is a bit smokey with umami in the front and some lingering spiciness in the back.

Rice Type: Yamadanishiki rice 55%
The nose on this sake made in a prefecture that is known for shochu is a very cool collection of melon, stone fruit, pineapple, tangerine, black licorice, and vanilla aromas. Spritzy, lively, bright, tingly, zesty, crisp, and refreshing, this brew is extremely talkative in the glass. Look for apple, Asian pear, honeydew, watermelon, papaya, and herbal flavors, with a minty and umami filled finish. What makes this Junmai Ginjo really cool is that you can taste the brewing technique that this brewery uses with lots of flavors upfront, a supremely quick finish, and an overall lightness and brightness that makes this sake drink so well.

The Kubota is a long-established brewery that was founded in 1830 and their sakes has been well- known throughout the world. This sake has an elegant, refreshing and gentle aroma, with echoes of umami and a smooth, dry mouthfeel. When chilled, you'll get hints of tartness and a crisp finish.

Rice Type: Hattannishiki 60%
Suigei, meaning Drunken Whale, is named after a warlord in Kochi Prefecture in the Edo period who loved eating and drinking. Suigei Brewing Company aims to create sake that pairs perfectly with any dish on the dinner table. They’ve achieved their goal with a versatility which brings a reserved ricey nose and milder umami with pleasant acidity when slightly chilled, and richer flavors with longer aftertaste when slightly warmed.

Rice Type: Gohyakumangoku rice 60%
“Tengu” refers to long-nosed goblins in Japanese folk-lore, and “tengumai” means goblin’s dance. This sake is a harmonious amber brew with a unique, almost mushroom-like scent to compliment its earthy tones, which calls up images of forests. With every sip, the more subtly you'll pick up on, from buttery tones to a walnut-like sensation. These unique flavors are superbly balanced, you might find yourself doing your own “tengumai” as you partake.

Silky smooth and smartly chic, Kinushiro is a Junmai grade nigori (unfiltered) sake with a fruity and refreshing aftertaste, with immense flavors of banana and a full but elegant character.

Base: Made with junmai sake and Japanese yuzu juice
This yuzu citrus sake gets everything the fruit has to offer. They use every part of the fruit in production, from the flesh and seed to the peel. The fruits are sourced from Kochi and Kagoshima, places known for their yuzu, and the base is a junmai using their famous Miyamizu water source. Each sip brings soft, balanced sweetness that lingers on like a gentle kiss.

Type: Umeshu (plum liqueur)
The nose on this plum sake made in Wakayama (which is the heart of plum country) is a fabulous collection of plum, honey, citrus, brown sugar, and rock candy aromas. This plum sake drinks soft, smooth, and beautiful. A little more on the sweet side than on the tart plum side makes this a fan favorite Umeshu that drinks great chilled and also goes well with an ice cube or two.

Ryujin Green Dragon God Junmai Daiginjo sake is often described as having a "big personality" and a complex flavor profile. It's known for its fruity and floral aroma, with notes of citrus, white flower, and a hint of pineapple. It features a smooth and elegant palate with a clean, sharp aftertaste and a balanced sweetness. Some descriptions also mention notes of green apple, melon, and subtle bitterness.

Rice Type: Yamadanishiki, Yuki no Sei, Gohyakumangoku
Aged in a traditional cooler that uses pure white snow for year-round temperature control, the nose on this sake is a chill collection of melon, green apple, powdered sugar, citrus, Asian pear, and floral aromas. Say hello to a brew that is confident, balanced, and relaxed; and that’s why they age it for three years... to get that special feeling. Smooth, round, viscous, and chewy, this full-bodied sake is layered, complex, and drinks like an open mouth snowflake catch. Look for lush deep flavors like nougat, cooked apple tart, pear confit, honeydew, and apricot tones. The feeling steals the show, and the snowmelt finish reminds you that this brewery has excellent brewing water from all of that Niigata snowfall.

Rice Type: Gohyakumangoku
This is one of, if not, the most sought after Daiginjo in Japan. This Kubota Manjyu is sophisticated and complex, and flawlessly balances umami, sweetness and tartness. Perhaps too drinkable, as the phantom finish leaves you wondering if you swallowed or not. The nose is a clever balance of honeysuckle and tuberose. The first sip spells the strength in clarity of this sake. Subtle flavors of Fuji apple and tart pear dance through the cleanest mouthfeel in the sake world.
